I want to know basically how far to turn the temp dial to the right before it turns AC off, which at times I want to do while accelerating instead of toggling the "econ" button because when I use AC I don't like auto stop to kill my cool while at a stop light. Feel me? Thanks guys/gals

The A/C is always on in AUTO mode unless you set it to "A/C off." Even if you turn the heat way up, it will still run the compressor for some dumb reason (yes, I know, humidity control and all).
For winter, leave it in auto, econ mode on, A/C off and then you'll not be running the A/C at all and just let the system moderate the heat let in from the the engine coolant.
from my experience the only time the compressor will be completely off in AUTO mode is when the dial is at 90. Anything in between and it will cycle on and off as needed, but as you move to a higher temp, the a/c will cycle on less often. But in auto mode, it also automatically controls the fan speed, which I think is more related to the cycling of the compressor than the temp numbers.
I don't use "auto" at all.
Just as the computer does dumb things like telling me to upshift from 4th to 5th while climbing a hill, it does dumb things with the climate control. I have "econ" turned on but adjust the fan speed myself (usually at max or max-1). That lets me keep the cabin temp set higher and yet still feel cool.

Yeah, it seems a lot of things with this car are about getting your personal feel for it because it was obviously designed by and for aliens or hybrids at least. I think the initial test panel was so awed by the strangeness of the new car they considered all of these counterintuitive features refreshingly new and unique or something rather than the frustrations they are. Its like they were trying to convince us this car is so cool it will figure everything out for you and you'll be happy. If only they had just put switches on these auto features, the auto-stop, and the AC just like the good ol days, and the ima... oh, and a simple dial for the fan! Pushing a button once to increase fan speed by one, and three times to decrease speed by one... that is an efficient and intuitive method for a computer, not human.
those are just the things I don't like though. And still learning the car.
